Wine Making

To maintain all their freshness and quality, the grapes are pressed and vinified on site in Mercurey. Then the wine is brought to Nuits St Georges to be raised. Only a small part of the cuvée is matured in oak barrels for 10 to 12 months. This allows the wine to acquire delicate woody notes, without masking the liveliness and character sought after in the white wines from Côte Chalonnaise.
